The most common genus and species of chicory - also found in the wild - is Cichorium intybus, now mainly cultivated, depending on the variety, either for its leaves (foliosum), which are eaten raw or cooked in salads (this is chicory or white endive), or for its root (sativum), which is ground into grains, powder or liquid and consumed as a vegetable drink with a distinctive caramelized taste.
